Called “Shamoji” in Japanese, this is a flat wooden rice paddle to stir and serve cooked rice and it is one of the essential tools of Japanese kitchens.This shamoji is thoughtfully shaped and handmade by the skilled craftsmen in Miyajima, Hiroshima prefecture, where they have over 1800 years of history producing wooden rice scoops.
Hand-polished to a smooth finish, the cherry birch wood is comfortably rounded and easy to hold. The gentle shape of the paddle ensures that grains of rice are treated delicately and not crushed, which is particularly important when mixing sushi rice. To prevent the rice from sticking onto the wooden rice scoop, it is recommended to soak it in water before use to ensure easy control over the rice.
