Do I need new gaskets or O-rings to install this?

Test-fit your connection points first. If the factory gasket is still in good shape, you may reuse it. If you're breaking the seal at the flange, grab new gaskets before assembly—don't reuse crushed ones.

Will the stainless tips discolor or need polishing?

Stainless steel stays cleaner longer than mild steel, but it will patina over time from heat cycling. If you want mirror polish, occasional steel wool or a dedicated stainless cleaner keeps them sharp. Nothing required out of the box.
